Will it keep chasing after the customer pays?

No. Every reminder checks the invoice first, and once it is paid in full nothing else goes out. If it is part-paid, the next reminder asks for the balance, not the original total.

Will all my customers get a flood of reminders when I switch it on?

No. When you switch an automation on, each existing invoice gets at most the one reminder that is due now - never every step it missed. Anything more than a week overdue for a step is left alone.

Can I stop it for one customer or one invoice?

Can I write my own wording?
